How should I store coffee?

Always store the coffee in a cool, dark and dry place, and not in the freezer or refrigerator. This is essential to prevent the fine flavors and aromas of the freshly-roasted coffee from degrading due to exposure to light and air. Ideally, you want to store your coffee in a 1-way valve seal container. If you have opened the coffee bag already, normally, the worst place is the freezer because the coffee beans will absorb moisture. However, our coffee bags are equipped with a 1-way valve seal and may be stored in the freezer, and this can actually extend the freshness.

What can you tell me about temperature & coffee?

According to the Specialty Coffee Association of America, 92 – 96C (197.6 – 204.8F) for 90% of the contact time is the optimal water temperature for coffee. How should I grind coffee beans?

The preference of many people is to grind as well as brew their own whole bean coffees. The best choice among coffee grinders, in regards to preserving the coffee beans’ flavors and aromas, is a conical burr grinder. The worst type of grinder to use is a blade grinder because they generate too much heat and can actually re-roast the coffee beans. Only grind what you are going to use at the time because once the coffee has been ground it will lose its fine flavors and aromas very rapidly. The most important point is to use the correct grind for your coffee maker. Avoid using too fine of a grind because it can break up the coffee bean fibers to much as it can cause the aromatic oils of the coffee to be over-exposed to oxygen and result in a distinct bitterness. Too coarse of a Grind will result in underextracted coffee, as the water will pass through too quickly. The most common coffee methods for filtering brewed coffee is using filter paper through a metal screen filter or even a cloth filter may also be used.

Can I use a French Press?

The best brewing method is often deemed to be the French Press, which allows coffee grinds to soak directly in hot water. With no paper filter to remove the coffee’s volatile oils, the French Press allows the coffee connoisseur to enjoy all of the best qualities of a premium gourmet coffee including its body, aroma, acidity, aftertaste, bitterness, and sweetness. A good French Press has a stainless steel or gold mesh filter. Make sure your equipment is perfectly clean because old residues can impart a tainted taste to your perfect cup of coffee. It’s also important that the glass be made of borosilicate – the same material as beakers in science labs – to deal with the heat without shattering. Glass is a poor choice. There’s a number of different brands and models as well as sizes, ranging from 1-cup (30 mL) all the way up to 8.6 cup (1500 mL).

What about automatic drip coffee makers?

Much more commonly used in Pennsylvania than the French Press is an automatic drip coffee makers with their filter-drip method of coffee brewing. What about Cold Brewing?

The Cold Water brewing method involves soaking the ground coffee in a relatively small amount of cold water for about fifteen hours, then using a filter to separate the grounds from the beverage using the drip method. A strong, concentrated coffee is produced from the Cold Water brewing method which is often stored for ready use, and may be mixed with hot water when desired. The resulting brew tends to be a low acid coffee and have a light body and while some say the coffee has a bland flavor, others describe it as a very pleasing, delicate taste.

What exactly is caffeine?

A crystalline compound produced for its pesticidal properties by a number of plant species as a deterrent to predators, caffeine acts as a central nervous system stimulant when ingested by humans. It is both fat- and water-soluble, and its consumption in a variety of preparations is widespread, with records of deliberate usage for its psychoactive effects dating back centuries. In addition to enhancing athletic performance and endurance, caffeine reduces feelings of sleepiness and improves concentration. Effective dosage is determined by the user’s physiology and tolerance, and can vary enormously among a population. Caffeine’s stimulant properties are expressed through multiple mechanisms of action, but the bulk of its activity takes place through its antagonist effect on certain neurotransmitter receptors. It binds to and obstructs the receptors for adenosine, a neurotransmitter which accumulates in the brain during periods of wakefulness, and prevents the buildup from reaching and activating these receptors. Without caffeine’s interference in this process, the activated receptors react by suppressing the central nervous system, a response experienced by the user as the sensation of drowsiness. In addition to delaying the onset of sleepiness, the lowered adenosine activity in caffeine’s presence encourages the release of other neurotransmitters with more stimulating effects.

How much caffeine is in cup of drip coffee?

Why does the Coffee plant produce caffeine?

Though it’s not clear why the coffee plant produces caffeine, it is believed to serve some essential role for the plant. We know this because caffeine is not part of the plant’s central metabolism and not use it to produce energy or new plant material. Therefore, it is called a secondary metabolite. Again, because it is found in all parts of the plant, from roots to leaves, and it takes energy to make, it must perform something essential. Here are the current theories: Allelopathic agent: produced by one plant to inhibit the growth of other plants. Although in labs the toxicity of caffeine to other plants has been demonstrated, it has not been observed or proven in nature. Defense against pets: it has been shown to be toxic to some insects and fungi. However, since there is yet to be a “caffeine deficient mutant coffee plant”, this has not been demonstrated in nature. Pollinator stimulant: research has shown that caffeine improves the memory of honey bees. Although, this has not been demonstrated in nature, and would not explain why caffeine is found in the root system.

Can you sum up the benefits of Caffeine?

It is well recognised that drinking coffee contributes to increased wakefulness and alertness. Most of the study of the benefits of coffee consumption and mental performance is centered on caffeine. There is convincing evidence that moderate caffeine intake helps to improve alertness and concentration. A 75mg serving of caffeine leads to both increased attention and alertness, according to the European Food Safety Authority (EFSA). A typical cup of coffee contains about 100mg caffeine, the coffee we roast and ship to you is about twice these levels. There is evidence indicating potential benefits of coffee & caffeine in situations requiring increased alertness (night shifts at work, studying for extended hours, long-distance driving). Some studies suggest that caffeine abstinence could improve sleep — in context of sleep quality and the time it takes to fall asleep. However, there are large differences between individuals and more research in this area is needed.Brain mapping technology has determined caffeine is not linked to brain circuitry connected to dependence and as a result caffeine does not fulfil the criteria to be described as a drug of dependence. Despite sudden ending of caffeine consumption may induce withdrawal symptoms in a small number of individuals, these are generally not very severe, are of short duration, and can be avoided by gradually reducing caffeine intake.
